journal # 27 (Persian Food)


From cultural aspect, food was considered to be an art providing enjoyment to both body and mind.Iranians refined the taste and flavor of food and how it is presented. The food that I want to give you recipe is the one of the popular food in Iran. The name of this food is "Khoresht Fesenjan" or "Fesenjan" only. "Khoresh" in Persian stands for a stew type of sauce. In below there is an ingredients of "fesenjan" and direction for how to cook it.

ingredients:
Chicken breast , 1-1.5 kgs
Ground walnuts, 500 grams
2-3 onions
3-4 bottles of pomegranate paste
5-6 spoons of Sugar
1/2 cup of cooking oil
1 spoon Salt
2 spoon Turmeric
1 spoon Black pepper
5 cups hot Water

Directions:
First of all, scorched Ground Walnuts about 15 minutes on the heat. After that, add 1 spoon of Turmeric and 5 cups of hot water. Turn heat high until boiling and the oil in walnuts comes out.
Then, add Pomegranate paste to the mix and turn heat down and let boil slowly for about 45 minutes. Slice onions thinly and fry it in the oil until slightly golden. Wash chicken pieces and add Black pepper, Turmeric, salt to the chicken and fry in onions until color changes. Add the chicken's without onions to the mix. The Khorest should be taken to cook long time enough so that the mix becomes quite thick. "Khoresht fesenjan" should be served with white rice.
